Cooked some greens of the season this week and it was awesome! I love spring greens.

Diner 1:
Sauteed hostas shoots (from my backyard!), grilled vegetables, quinoa and shrimp.

Diner 2:
Farmer's market asparagus, grilled long eggplant, served with cherry tomatoes, arugula from my garden (still tiny, but oh so tasty!), sheep's feta cheese from a small farm I discovered around my place, a bit of EVOO, well hidden farro and tuna steak with Korean BBQ spices.

Diner 3:
Fiddlehead ferns, quinoa, fresh salsa (tomatoes, mango, fresh ginger, shallots and preserved lemon) and baked cod (sprinkled with flour, cumin, coriander powder and paprika, all mixed together).

I discovered a few years ago that hosta shoots were not only edible, but also delicious. My BF and I are always anticipating that one week of the year were we can harvest them, we monitor them closely to cut them before they start to open, but still get the most of it. They're that good!
