On the menu: salmon cakes, roasted red pepper sauce, spinach with garlic, and a Greek salad.
Whenever I get extra or odd shaped pieces of salmon, I save them in a bag in my freezer, and when I have enough, I make these patties. I just chop the raw salmon in a very small dice, add some minced red onion, sun-dried tomatoes, parsley, a few capers, salt and pepper. I cook them about 3 minutes per side in a non-stick pan.

    I definitely prefer Greek salad in bigger cuts like this, next tike I make one I’ll definitely cut it like that. Beautiful salmon too! Fish is so pricy here right now in Canada on the west coast, I’m probably gonna start actually fishing for myself cause it’s literally 20$ for a tiny slab so seafood is a rarity in my diet .
