We visited Schloss Shauenstein for lunch recently, a last minute spur of the moment booking. Absolutely fantastic meal every moment of the day was thought out and special. The setting is magnificent and the service exemplary. We went with the five course menu with an additional secret dish. I forgot to take photos of a couple of the dishes and the photos might not do the dishes justice. We had the non alcoholic pairing as we were driving, all but one of the drinks was a win and paired well with the food.
(2-4) amouse bouche served upstairs in a separate room where we had an aperitif and browsed through the menu.
Stand outs for me were the mushroom Tartelette, absolute umami bomb. And the Asparagus with egg,ham and Elderflower, delicious.
(5-7) we were ushered downstairs to the dining room where we had four more pre main course dishes. Missing from the photos was a rhubarb and celery dish with a jalapeno sorbet. The white fish (6) was the perfect texture and accompanied by radish and horseradish and kimchi. Then followed by a cabbage Gyoza in a beetroot jus.
(8-11) are where the main dishes started. I have missed the sweetbread dish, the langoustine was the secret dish and you can understand why this is a classic of the restaurant. The confit trout and the pork were the real stand outs for me.
Before dessert we were offered a 2nd secret dish or cheese but neither of us had any room for more food so opted out.
Desert (12) was a vanilla soufflé, grapefruit and pomelo with candied grapefruit rind. Then candy floss with a grapefruit ice-cream. I really enjoyed this desert. Not overly sweet after all of the dishes before.
(13) we were then whisked back upstairs for petit fours and coffee that consisted of pistachio macaron, donut, a meringue and yoghurt combination, coffee profiterole and pralines.
Overall we would absolutely recommend and would happily go back tomorrow. The chef uses spice subtly and excellently which I particularly enjoyed. There wasn't a miss, hats off to the team.
