Porridge made with "scrap broth" (veggie scraps stored in the freezer and then cooked into broth), made from bulgur, barley, Oats, flax, chia, and mung beans and seasoned with soy sauce, fish sauce, garlic and ginger.

Topped with peanuts, jammy egg, green onion and cilantro.

Not the most veggies but it's the end of the week and I was cleaning out the fridge.

    Everything (except toppings) was thrown into my instant pot for about 45 minutes at a 4:1 water to grains ratio.

    Eggs were 8 minutes eggs, but I like them soft in the yolk.

    Lots of toppings would work here, honestly.
