  1. Yaki Udon – I used pork as the protein since I had some to use up

    Miso Soup – green onion, tofu, shiitake, white miso

    Rice

    Pickled Cucumbers – they were only in for about two hours but came out slightly sweet

    Carrot/Daikon Salad – Holy crap this was delicious

    I still have a lot to learn on presentation I know but I was pretty happy with the taste of everything. The miso got a mixed reception, I think the dashi powder I used was a bit strong. I might have to Americanize it up a bit for my family to be on board. I loved the tofu coming out of the soup though. It was delicious.

    Looks great! Yakiudon with pork is so delicious. shiitake in the miso soup? Magnificent! Mushrooms generally have a lot of umami, so you can definitely dial the dashi down (or just make mushroom dashi.

    Also, for Japanese set meals, rice always goes on the left (most honorable position, but who knows why), and soup on the right…totally annoying for lefties.

    For your pickled cucumbers, it’s sometimes better to cut them more thinly and then leave them in a little salt for 10 minutes or so to draw out some of the moisture. After that you can pickle them. My MIL does it that way and they are awesome.
