Made for dinner last night. I strayed from my usual of mayo, mustard, onions, and pickles and took a page out of my wife’s book and went with one of her usuals, which is bbq sauce and ketchup. I did add pickles and a big pile of shaved white onion to mine though. I gotta have some acid and bite in my burgers, especially to counter the sweetness of the sauce and ketchup. Speaking of sweetness, it was a touch too far on the sweet side for my tastes, but it was fun to mix it up a bit.
Blend of home ground chuck and short rib smashed in a 575°F cast iron pan and seasoned with salt, scraped, flipped, and topped with Boar’s Head yellow American cheese, covered to melt, and placed on a butter toasted Arnold’s potato bun dressed with the aforementioned toppings.
