Made peach jam for the first time. The peaches were very very ripe, but I'm not getting a strong taste of peach, it tastes mostly like sugar. I scaled up a recipe from the Ball book I got on Amazon. Not sure how to make the fruit taste shine through.

White, or raw sugar? I made the mistake of using raw sugar with a light fruit and I got the same problem. Won’t to that again.
With my jams I use like a fifty fifty ripe and almost ripe fruit. Brings more of a tart flavor through. Fun trick I was taught in a class. While making raspberry jam, half it with strawberries. Less seedy and no one will notice…unless their allergic lol
I usually go with low sugar pectin for jams. You get more of the fruit flavor and not an overly sweet sugar flavor.
I have never had peach jam come out that color. What type of sugar did you add?
