Pasta + cheese + pepper = Cacio e Pepe!

    Really simple recipe:
    You’ll need some spaghetti, fresh black pepper and about a cup of pecorino romano. That’s it.
    While boiling the pasta, scoop a bit of pasta water onto your pecorino romano in a bowl and stir it to make a paste. In a separate pan, scoop about a 3/4-1 cup of pasta water, and add black pepper. Keep it on really low heat, you want the pan to be warm. Kill the heat about a minute before the pasta is al-dente.
    When the pasta is ready, move it to the warm pan with the bit of water, don’t add any additional water but do keep it available, and then add your pecorino paste, start stirring vigorously with tongs to emulsify the cheese and the warm water until you get a cream. If the cheese is still a bit grainy/thick, add a little more pasta water. If it’s too runny, add more cheese. Stir and stir and stir until it’s all creamy and delicious.
    Warm up a plate in your microwave and pour your creamy deliciousness onto it, cracking fresh black pepper on top, and you’re done!
