Rule 4, gonna get removed.
Throw it away if it smells off. Thats the test. Otherwise its up to you if ya wanna take a risk. Likely wont kill you but could make for a fun day on the porcelain throne.

When I was a butcher I had a customer that would wait till almost closing and only buy the steaks that were slightly brown because he said it had better flavor. Your steak in the pic looks fine to me, I would eat it.

If it has any rotten smell whatsoever, throw it out. Rotten beef has a tremendously bad smell.

If it’s bad you will know…if not sure cook it up and you will know for sure once it starts cooking.

It’s oxidization or something. It means it not 100% fresh, it’s fine to eat. If the odor is funky at all toss it, meat can a have a slight odor but it shouldn’t be pungent or foul at all.

I had a really nice steak the other day that went a little too long before being cooked. It was expensive and I felt bad to waste it so i took the chance and cooked it.
Tasted great and came out super nice looking….
But, I woke up in the middle of the night super nauseous and spent the next several hours moaning with stomach pain. I still feel icky today. Last time I risk a questionable piece of meat!

Visually it looks ok to me, I would however say to trust your nose above all else. You can try washing the meat to see if the smell stays, depending how you bought it the packaging can make it smell a little funk, but again not foul.

OP, sometimes meat packed in plastic just needs to air out a bit. Fresh lamb tends to smell like baby shit straight out of the package, but delicious and totally fine when cooked up. Pork will often have a small funk but with a little exposure to oxygen, just fine.
Typically a strong smell accompanied by discoloration is what you need to look out for. Bad meat will also be “tacky” to the touch.
We throw out far too much perfectly fine food as a society! A little bit of browning is totally fine and natural. This meat in particular looks wonderful.
