* 1 baguette * 1 cucumber, sliced * 1 red bell pepper, sliced * 1-2 tbsp hummus * cilantro
###Instructions
1. Combine the tofu tikka ingredients in a bowl making sure the tofu is fully coated. Set aside to marinate. 2. Add the mushrooms directly to a hot pan and cook for 5 minutes. Then, add the oil, soy sauce, and maple syrup. Cook for another 5 minutes and set aside. 3. Slice the baguette in half. To assemble the banh mi, add a layer of hummus, 2 pieces of tofu, red bell pepper, cucumber, and cilantro. Enjoy!
