SWIPE to the last photo to see my very first loaf ever!

This is by far my best loaf yet…I’ve had decent but yummy loaves but two weeks ago I made the worst loaves ever, they went immediately into the trash. This is the first one with a true ear and oven spring. I’d love any ideas to improve on the crumb. Any critiques are welcome.

Followed The Perfect Sourdough’s recipe:
-1000g of KA bread flour
-600g warm water
-60g starter
-15g salt

Combine flour and water and let sit for 30 mins on counter. Mix in starter, salt and a splash of additional water (it was very dry). Combine until shaggy. Cover and let sit on countertop with damp towel for 30 mins. Complete stretch and folds every 30 mins for 1.5 hrs. Rested, covered in microwave for 5 hours. Pre shaped and counter rested for 35 mins. Shaped and placed in banneton. Refrigerated for about 14 hours. Preheated Dutch oven at 500 degrees for 30 mins. Scored loaf, added ice cubes for steam and baked covered for 20 mins at 450. Removed lid and baked uncovered for 25 mins.
