No idea what this dish is.
* Cooked onions, peppers, tomatoes and eggplants with a bunch of seasoning * Heated-up leftover portion and cracked in some eggs to stew * Added in some greens * Served with some toasted whole grain bread

Same but mostly because of ability, or lack thereof. I wish I had a cook to make some of the stuff I see on this sub.

This is the kind of cooking that makes great βcasual cooksβ. Youβll never really learn to have a high end restaurant presentation, but youβll be known as a damn good cook and people will look forward to eating your food. I came up in the poor US south and some of the best cooks in the world were making deliciousness out of what they could scrape together.
This makes you a confident cook and for those that are new to cooking food, especially for others along with yourself, having confidence that youβre going to be able to serve something that tastes damn good regardless of the presentation and recipes is a huge factor.

Same here! You do not need to use a Mediterranean flavor profile to follow the diet. Mexican food, Indian food, American, etc. all can be made to work just fine!

This is basically how I do it. Never used a real recipe. Vegetables either in a salad or sautΓ©ed in olive oil. Add some rice and some fish/chicken. I like the simplicity of it.
