Been going insane the last few months rehabbing a back injury that's stopped me from living my normal life and routine, primarily in the gym. So I started to get back into cooking some meat that I used to love to do on my Traeger that I no longer have, but just trying to keep my mind busy. Was trying to make something on the days there were NBA games.
1 – Ribeye from Costco. First time dry brining and first steak from Costco. Turned out great. Dry brined with salt overnight, let it get to room temp and seasoned with pepper after. Cast iron for I think about 2 minutes each side before I added butter/garlic and started basting flipping once more each side.
2 – Full Beef Short Rib from Sam's – First time doing one of these ever, let alone in the oven. Actually called Meat Church in Texas for advice on how they'd cook it in an oven if they had to lol. Mustard binder, just salt and heavy pepper – 225, no wrap, I think for about 8-9 hours? Doesn't look it from this picture, but it was super juicy and tender. Have a video but couldn't post it – bone pulled right out. Was almost even better the next day after all the fat just coagulated back in the meat. Used the drippings caught in a pan underneath and dripped it back over top of the meat once or twice during the cook to try and act as a spritz. Eventually took it out and covered it in aluminum foil and let it rest for about 15-20 before cutting. Wasn't bad for a first time.
3 – Beef Back Ribs from Costco – Have done these before and really not the biggest fan of em, but wanted to try again doing em different than I'd done em before. Did one with SPG, one with a Traeger beef rub. I think 250 for 5-6 hours? Put some bbq on em and broiled at the end. Usually not a lot of meat on these, but the pack I saw at Costco looked a little beefier so I grabbed em to try again.
4 – Skinny Beef Short Ribs from Costco – Bought a big pack for a birthday party. Nothing but a store bought KBBQ marinade overnight and threw on the grill super hot and flipped. Loved these for a big group of people, the char that formed was so good 11/10 would recommend doing these sometime.
Anyone have recommendations for other meats I should try? Seen oxtail at Costco but never had it, my girl says it's good in soups? Bored and trying to stay busy lol. Have access to my oven, cast iron, and a propane grill.
Would love to try some braised fancy short ribs, also try and do some kind of birria sometime.
