Chef Anthony Vitolo of New York’s Emilio’s Ballato prepares some delicious shrimp scampi that the whole family will enjoy.

we are joined Now by a chef who is known for his authentic Italian American Cuisine he is The Mastermind behind the delicious dishes at the NYC hotspot amilios Bato good luck getting in by the way yeah and he also recently opened a restaurant in Florida veto and he’s now here to share one of his favorite recipes with all of us welcome Chef Anthony y good to see you brother um we also have to say congratulations did you have a little bundle of joy on the way number three two daughters there’s another one coming oh wow outnumbered outnumbered for sure outnumbered yep what are we today congratulations so we’re going to do a nice summer dish we’re going to do a shrimp scampy we’re going to get started we’ll just I love that shrimp scampy is a summer dish a summer dish it’s light pretty light no no no for sure uh we’re going to add like a little white wine to create a stock okay A little parsley M so over here DeMarco can you add the uh the garlic for me okay put it in here yeah put it in oh co all of it yeah all of it oh cool my fing he was going to kill me so pick up everything pick up the tools it’s okay and then we’re going to put a little butter oh nice yep a good smells so good can you smell it yes you smell the garlic oh wow smells delicious that like that’s just something you want to pour over everything to start with so then we hit it with a little more parsley and once the uh garlic is brown mm we’re going to add the shrimp stock oh you don’t want to pour out some of the wine okay you just let that cook through m a little bit mhm and this is a quick dish you can cook this in like 10 to 15 minutes o that’s awesome so uh you know all the parents at home when you have kids and you need something you know nice and quick cuz the struggle your summer dish to go to but how long did you cook the shrimp you don’t want to cook that no you can’t over you can’t overcook it so you just on both sides when it gets white mhm you turn it oh wow look at that that was quick and that was really quick exactly that’s took no we we’re actually cooking this live yes okay so what’s the next step so the next step is we’re going to add a little starch water okay to create a sauce is this like pasta water so this is the uh Liquid Gold that I always talk about because it brings all the ingredients together it creates like uh em musification so when you add the pasta which we’re going to do now and EV I think you were mentioning it is that the water from the pasta yes okay okay so it’s starchy so it brings all the sauces together as you can see just look at me learn mix it together you all mix it all together if you need a little starch water you see how it’s dry you just add more starch water right maybe more wine there you go a little more wine wine this is how we cook at my house there you go so this pasta is halfway cooked mhm so you want to cook it the rest of the way in the sauce cuz then it It Coats the pasta and every single bite you have that shrimp the lemon the white wine The Parsley the garlic beautiful very fancy let’s move on down and try this bad boy is already you know tast see so so these are uh panko breadcrumbs that I seasoned with parsley some garlic salt pepper and garlic powder oh the so that’s the garnish over the top so you have the shrimp you got the crunch you got the you know the the lemony the shrimp crunch is like a really nice oh we have a guest we have a guest uhoh uhoh we got a a superstar right here what’s up man welome yes the legend has walked in oh you got a tie band try it try smell that a try it you got to have a shrimp you got to have the Linguini have the bread crumbs all in one bite nice twirl isn’t it good oh my gosh M you got to get all the flavors in one you know yeah yeah up to you guys he’s ready to take off you this is nice this is amazing so good oh yeah and you say this is about 10 minutes out so the the longest part of this process is cooking the pasta which takes about 10 minutes when you pull it early so like 9 to 10 minutes and then you make the sauce so about 15-minute dish all right under 30 minutes that’s on the 30 minutes 100% all right Chef thank you good to see you and for today’s recipes just go to good morning.com food or scan the QR code on your screen
