Roasted veg, leaves, crystal bread, poached eggs, golden flax seed & furikake. Wasn't feeling very creative this week so just picked up random crap that looked good from sprouts.

  • 24oz mixed mushrooms torn in to chunks
  • 2 red onions sliced in to thick rings
  • 3 large vine tomatoes and handful of grape I had left over, large tomatoes cut in to sixths
  • 10 cloves of garlic minced
  • Herbs & spices: 2 tbsp nutritional yeast, 2 tsp oregano, 2 tsp rosemary, 2 tsp thyme, 1 tsp savory, 1 tsp sage, 1/2 tsp sumac & 1/2 tsp lemon peel. 2 tsp salt and heaps of pepper.

Super easy to make;

  • Tossed all non-onion veg together with all herbs, 1 tsp salt and 2 tbsp canola.
  • Tossed onion rings in 1 tsp salt and 1 tbsp canola
  • Baked single layer 375o for 30 mins

To serve;

  • 2 pieces toasted crystal bread (super easy to make, very low density bread so low in calories).
  • 2 eggs poached
  • 2 tsp golden flax seeds
  • 1 tsp furikake
  • Handful of spinach & arugula mix
  • Pinch of chipotle powder
  • Squeeze of lemon juice for greens
