– 1000 ml of stock (personal preference, I usually use chicken stock)
METHOD:
Cut your red pepper, onion and garlic into smaller pieces and throw onion and garlic in a pot with some oil. Mix until onions are see through. Then add in bell pepper and grated ginger and mix for a few minutes. After a few minutes add in your stock and let it go to boil, after you see bubbles lower the heat and add coconut milk and Tom Kha seasoning, Mix well and wait for it to boil. Then add your gyoza and boil for a few minutes before adding your egg noodles (noodles boils faster than gyoza). And there you go – you have home made Tom Kha gyoza noodle soup. Just add green onions and lime on the top.
