So the menu just says "uni spoon" with no further description. Obviously we have uni, then I'm fairly certain the other items are quail yolk, salmon roe, sturgeon caviar, and something pink under the caviar. It was very mild compared to the other flavors. Is it some type tuna? It wasnt quite a paste, but it was very finely minced. Not as dark and milder flavored tha maguro. Might not have been fish at all.

It looks like negitoro (minced tuna) to me.
Could be nakaochi, which is a really tender part of tuna between the ribs. After the tuna is broken down they scrape the meat off between the ribs with a spoon.
It looks amazing! 🤩 I want to eat this At first I was going to say maguro (bluefin tuna), but looking at the fancy gold leaf, I’m less sure. It might be something else that’s in-season now …usually I’d ask the server.
Considering the rest of the plate appears to be eggs, if it’s crunchy and super salty it could be brined salmon roe
