[Music] this recipe for red skinned potato salad was submitted by an all recipes member named Donna who commented that this creamy salad is made with red potatoes melt in your mouth bacon bits of hard-boiled egg crunchy celery and spicy onion a delectable firm texture first we’ll cook the potatoes clean 2 lbs of new red potatoes now we can half these or even quarter them so they cook [Music] faster place the potatoes in a large pot cover them with cold water add salt to taste and bring the water to a boil once the water boils cook the potatoes until they’re tender but still firm about 10 to 15 minutes drain the potatoes and put them in the refrigerator to cool meanwhile Place six eggs in a [Music] saucepan and cover them with cold water adding a teaspoon of baking soda will help with the peeling later on bring the water to a boil and then immediately remove the saucepan from the heat cover the pan and let the eggs stand in the hot water for 10 to 12 minutes remove the eggs from the hot water and place them into iced water set them aside to cool further now we can peel and finally chop an [Music] onion and chop One stock of [Music] celery now for the bacon Place one lb of bacon in a large deep Skillet and cook the bacon over medium high heat until it’s evenly Brown drain the bacon crumble or chop it and set it aside when the eggs are cool peel them and chop them into a rough dice once the potatoes have cooled put the potatoes in a large bowl add the crumbled bacon the onion the celery and 2 cups of mayonnaise you can reduce the amount to lighten this recipe up a bit if you like then add the eggs season it with salt and pepper to [Music] taste chill the potato salad for at least an hour before serving with bits of egg and bacon in every bite this creamy potato salad is out of this world [Music]

  3. theres this potato salad this sandwich shop has and it is the most amazing potato salad i have had. i dont think this recipe could even reach its level. especially with its ew bacon.

  4. I've made a similar recipe but I stir in chopped pickles and add dill weed on top for an aesthetically pleasing potato salad 🙂

  6. You overcooked the eggs, and 2 c of mayo was too much, even with 3# of potatoes, eight eggs, four times as much celery and a whole red and yellow onion. More salady than potato-y.

  7. It looks delicious. The waxy red potatoes are absorbing that rich mayonnaise dressing well.

    I normally use Russet potatoes. They're a lot more flavorful if boiled in their scrubbed skin.
