Are you using a cast iron pan with a cast iron griddle press? You want to press the edges of your burger very thin on a piece of foil or parchment paper. Smash them wider than your bun by a decent amount as it will shrink, and tapered up to a slight mound in the middle. The press will help keep the thin edges down while cooking, you will need to move it around during this process.

They look great. Tbh, true smash burgers don’t do much for me. Nothing beats a good medium cooked patty with good fat content, onion, pickle, some relish or ketchup.
