My wife’s birthday was approaching, and she and I are vegan. She mentioned a few weeks back that she just wishes she could go in somewhere and buy a vegan friendly hazelnut cake, but the vegan options for cake are slim and usually if they have them are very boring/generic (think vanilla with vanilla frosting, etc).
So as part of her birthday surprise, I scoured the internet for a good recipe and gave it my all!
The sponge is a rich chocolate buttermilk with a dash of espresso in the mix, and the frosting is a rich chocolate hazelnut buttercream. I used a food processor to eviscerate actual hazelnuts and mixed them into the layer of frosting between the sponge, then decorated with whole hazelnuts (and used the rest of food processed hazelnut bits to dress up the cake stand).
The flavors came out AMAZING, and I’m so proud of myself for this being my first cake bake ever!
She was over the moon and complimented me on the moisture and texture of the vegan sponge (which in restaurants is typically either super dense or very dry).

Not trying to be rude, I’m sure the cake was amazing, and it looks incredible! But… buttermilk and buttercream is not vegan, right? I am also not vegan so I’m not an expert of course, just genuinely curious.
First cake AND vegan? That is impressive. The first time I tried making a vegan cake (with years of prior cake experience) it did not rise at all. The texture on yours looks perfect!
