Lemon Myrtle and Garlic Grilled Chicken

Ingredients
– 4 @lilydalefreerange chicken breasts
– 3 tbsp olive oil
– 1.5 tsp lemon myrtle
– 3 cloves garlic, finely grated
– 1 tsp salt

Method
1. Slice the chicken breasts in half lengthways so you end up with large flat fillets. Place the sliced chicken breasts in a bowl with the olive oil, lemon myrtle, grated garlic, and salt. Mix well, cover, and leave in the fridge to marinate for 1-4 hours.
2. Preheat your grill to the highest setting and remove the chicken from the fridge.
3. Grill the chicken on both sides, turning every 45-60 seconds, until the chicken is cooked through. This will take roughly 5-6 minutes depending on how hot your grill is.
4. Once you have good colour on both sides and the chicken is cooked through, remove from the grill and place on a wire rack to rest for 3-4 minutes before serving.

  2. It basically a dry brine. Ignore the other ingredients in the marinade. The salt does all the work.

  3. Even better, brine your chicken for 24 hours.
    Then cook on an indirect heat (oven) until cooked in the Center.
    Sear at the end for flavour.
    Smoking is is actually better than the oven though.

  4. Free range is pretty much a scam. They get a TINY section of outdoors (literally like 1 or two chickens can sit there at a time) and are packed tightly into crowded room. It is hardly better for the chickens and is way more expensive. Don't bother. If you care about chicken quality of life, get pasture-raised.

  7. I’m into bodybuilding and so I’ve seen and eaten a lot of chicken… however that chicken you just cooked is probably the best looking chicken breast I have ever seen!

  8. That looks great. But, you could choose to cook chicken (chook) thighs instead of breast. Thighs are more flavorful and don't dry out like breast meat.
