I'm learning to can beans and I'm wondering if I put too many soaked beans in the jar and they just absorbed all the water or if this is an example of siphoning? Just did them yesterday so I can pop them in the fridge if I did something wrong.

    Seems like siphoning to me. As far as I know, small amounts of liquid loss like this are okay as long as the lids actually sealed. I personally keep the siphoned ones in the fridge long term and use them first. Then examine them super close when I open them for odors, texture changes, and proper lid seal. I’m kind of new at this though so get a second opinion.

    Edit: Also if the water in your canner was murky with bean liquid, it’s definitely siphoning.
