this isn’t your Bubby’s Moab Bal soup recipe instead we are combining two classic soup recipes and creating a delicious roasted tomato soup with cheesy Mozza balls the star of the show are these light as air matzah balls with creamy ricotta cheese grated Parmesan and fresh basil as the matzah balls are boiling I like to make a Parmesan chip to garnish a soup with all you need to do is grate parmesan cheese onto a parchment line baking sheet and then bake it for a few minutes until crisp now it’s time to assemble pour the tomato soup into a bowl add the ricot matah balls and top the soup with fresh basil a drizzle of olive oil and that crispy Parmesan chip how good does that look
