    You’re probably over paying because it’s a Tomahawk and the presentation. But in all honestly this has very little marbling and unless you butter base this steak it might not taste that good. You can probably buy a single prime boneless ribeye for $18 at HEB too.

    The big heavy lines of fat are intermuscular – between muscles. This won’t render or add much of any flavor. The specks of fat marlbling throughout the meat is intramuscular and that is what you want – the above is extremely limited there. You’re paying for quite a bit of wasted fat and bone here, you can do better for $20
