signal the staff and ask “Kore wa nan desu ka?”, which basically means ‘what is this called?’ It looks a bit like motsu which is part of the cow’s large intestine, probably an offal of some kind

Definitely Horumon, aka offal. More specifically I think it’s Techan but not super confident unless I see it cooked.
