First time canning and I made the ball recipe Bloody Mary mix. I put them in the canner and boiled for 35 minutes with the lid on as the recipe stated. When I started the timer the water was an inch over the jars and at the end of processing it was just under the top of the jars. All of my jars popped and sealed are they safe?

    Yeah, that isn’t good enough to be 100% sure it is safe.

    If it were me, I would open the jars, pour it all into a pot, reboil* and then re-can it with new lids. You probably had the water boiling harder than needed if you lost so much water, it just needs to be barely boiling, not a hard boil. If your pot is big enough, start with more water and if it isn’t you can add more boiling water half way through, just keep it all boiling and covered the whole time.

    *Assuming your recipe has you boil it originally, I am too lazy to look up the recipe.
