  3. You’re getting there! I would recommend drying the steak more before searing. You could try using some paper towels. Also make sure that the pan is piping hot. That will get you a better sear! Since you were cutting the steaks yourself, I would also recommend making them thicker. That will make it easier to get the right temperature. Everyone does not need a whole steak on their plate, it is perfectly fine to have a few nice slices.
