I picked up a variety pack from this company recently. They make pure pepper purées in a variety of habaneros, cayenne, ghost chili, and reaper.

They’re meant to be used as cooking ingredients as opposed to sauces I believe, and while the salt content is very high, if you’re using it to cook you’d just add less salt to the dish.

I attempted to recreate the best version of Camarones ala Diabla I’ve ever tasted using this tonight but didn’t quite hit that mark, but it did still end up tasty.

The puree adds a great pure pepper flavor, the ingredients are just peppers and salt. I’ll have fun cooking up some dishes with the rest of this jar then trying the others.
