Been making this monstrosity since before cottage cheese became cool. If you like have a mixer and a powerful blender then give this protein fluff alternative a go.
Two rules to make it nice and stable: don’t add any fat until the end and don’t overblend/overheat.
I put my mixer bowl in the freezer. Blend fat free cottage cheese (not lowfat! I use Great Value – 340g) a bit with sweeteners/vanilla extract to taste. Then add ice (I’m using 480g) and blend just until smooth, helping with a tamper. Too much blending may make the final product runnier. Transfer to the cool bowl, add xanthan gum (1-2g) and whip on the highest speed for a few minutes until high in volume and fluffy. Again, don’t overdo it. At this point you can add a fat or any other mix-ins and whip just a bit more until incorporated. I like adding cocoa or cereal. You can try making a smaller batch – this thing is HUGE in volume!
