1 can (250g) chickpeas (cooked, drained and cleaned)
8-10 lettuce leaves
1 red bell pepper (small)
1 yellow bell pepper (small)
1 english cucumber (medium)
1 carrot (small)
1/2 cup pomegranate

SALAD DRESSING
1/2 cup (75g) cashew nuts (or 2 tbsp cashew butter)
2 tbsp olive oil
1-2 garlic cloves
1/2 lemon
1/4 cup water
salt and pepper (to taste)

Hi there 🙂 Let’s make a delicious chickpea salad! Wash 8-10 lettuce leaves thoroughly and dry it well Salad spinners are great to dry leafy greens! Cut lettuce into small pieces Remove the core and pith from 1 red and 1 yellow bell pepper Cut into strips and dice into small pieces Dice 1 medium sized english/persian cucumber Peel and dice 1 small carrot. You can also grate the carrot. Add 1 cup of cooked or canned chickpeas Add 1/2 cup of pomegranate seeds Dressing: 1/2 cup cashew nuts (soaked) 1/4 cup water 2 tbsp olive oil 1-2 garlic cloves 1/2 lemon Salt and pepper Blend until smooth. Soaking cashew nuts helps blend it well Add the dressing and mix gently Dress the salad just before serving or the lettuce will wilt Healthy and delicious chickpea salad is ready!   3. I am definitely going to make this. I love that you made a cashew dressing! I usually don't like salads because I don't like bottled dressings, so I generally only use lemon slices with salt and pepper unless I make my own raspberry vinigrette or poppyseed dressing. This looks phenomenal!
