I prepped a big bowl of cucumber slices for bread & butter pickles by salting them. They were supposed to sit a few hours, but I got busy and they have been brining for 5 days in the fridge. Some of the slices on top were a bit dried out, but after a quick stir they look okay. Can I still use them to make pickles and they'll just be extra salty? Or are they unsafe to use?

    Honestly, I don’t know, but if it were me I’d go ahead with the assumption that the salt and low Temps kept them safe.

    If they were kept in the fridge they should be fine. Just inspect visually for mold growth or any unusual odor

    5 days is a long time, I’d be worried they would become super mushy from sitting so long. I would suggest relish or fridge pickles
