    The term is great but your crust got owned. Those grill marks are scorched flesh, and you have no crust. This happens when your grill (as in, the metal you place the meat on) is way, way too hot when you put the steak on it. You can’t fill the whole grill with charcoal, you want a cool section where you can cook with indirect heat. Rotate the cool part to the charcoal section when you’re ready to place the steak, and then put it on there. This will avoid those nasty burn marks on the steak, and allow you to make a crust.

    A tutorial of what I’m talking about – this is more or less how I do it, too. I’m a little less fussy about the char, though.

  6. I had my doubts with those grill marks, but yeah that turned out pretty good. Probably would have benefited from sous vide or reverse sear to render the fat a bit more, but then you wouldn’t be able to get those grill marks without going over.

    I paid $64 for a ribeye tonight that was worse than this by a mile.

    I prefer a nice crust over burn hash marks on a steak, but some people love so who am I to say no.
