I’m doing a low-fodmap thing right now and have been dying for some wings lately, but restaurants put all kinds of sugar and stuff in their sauces and they’re way too expensive at a restaurant to get plain/unsauced imo. Below is everything I made, ingredients and the process:

-About $10 worth of Costco wings (about 4lbs!!)

-sauce: 1/3 cup tapatio and 1/3 valentina with 1 stick of butter and 1tbsp of garlic oil (didn’t have franks when I went to the store)

-not pictured: ranch with avocado mayo, fresh parsley dill and green onions, lemon juice salt and pepper; celery sticks

  1. Brined the wings for about 10hr in salt water, pepper flakes, white vinegar. In hindsight, I think the brine gave them incredible tenderness but it was too salty. I followed the recipe, and they weren’t ruined or anything and were just a little too salty off the grill, but considering the salt in the sauce and ranch, next time I’ll use a bit less in the brine, especially since low-fodmap means pretty much no sugar to cut the salt. I also will use unsalted butter next time in the “buffalo” sauce.

  2. Pat dry and spray with avocado oil. Spray grill with avo oil and set all burners to medium, let it heat up for 5 or 10 min.

  3. Threw them all on and covered for 7min. Flipped and did another 7 min. Scooped up the small and medium sized ones and gave the bigger drumsticks a couple extra minutes angled top-down to get the chunkier ends.

  4. Tossed half the wings in half of the sauce, served with ranch and celery.

Did I have a stomach ache afterwards? Yes because I hoovered 20 spicy salty wings with a thick ranch and celery, NOT because of fodmaps! This morning I woke up feeling great. Ate the other half for breakfast, then I didn’t feel great and violently evacuated my bowels, but chalk it up to the game. Again, next time I’ll be more mindful of the salt, but I’m satisfied with the result overall. I think the brine really made them tender and delicious, and overcooking them was my biggest worry.

    Aren’t garlic, onion, and celery bad for low FODMAP? I hope you find whatever triggers you, gut problems are a nightmare. Wings should only bring you joy.
