    I always ask for medium and it always comes out as a perfect medium rare. Most places don’t know how much time actually is needed to make a steak medium, so they pull it early to avoid overcooking.

    But my guy….that is tuna.

  8. I always ask for medium with rib eyes at restaurants. Not many places cook medium rare very well at all. Unless its an actual steak house.

    Never new the char had anything to do with it. Just heard people from all over the country refer to it as really rare piece of steak.

  13. Looks like you’re at a nice place in which case you should absolutely send it back.

    If a restaurant is going to charge you $50+ for a steak it needs to be cooked properly. This is also blue as hell and not even close to medrare.

    I went to 555 in Long Beach (saying that out of spite)

    $300 meal. Non sear, non rendered “mid rare” that looked exactly like that pic. I told the server and he said “that is medium rare.”

    Just empathizing with you. Been 2 weeks and I’m still mad.

    I’d enjoy it, but not if I wanted medium rare. I like anything from blue to medium, but it really depends on my mood and the cut off steak.

    Send it back. No shame in sending back improperly cooked food.

    It’s a bad feeling having to send it back, but that’s unacceptable.

    Looks like a frozen/refrigerated steak on slightly too high heat. Flipped twice, you can tell by the slightly uneven cook. Probably set to a timer rather than internal temp and only seasoned to order. The marbling isn’t bad. But it hasn’t had time to fully render internally.
