   AGREE! They also serve it at Quality Meats. We keep meaning to just saddle up to the bar at a Quality and just have wine and corn brûlée!!

   I’ve made something like that before, with no dairy (the wife can’t eat dairy) only “cream” made from puréed corn. Thought I invented it. Came out pretty good; I wonder how much better the professional version is.
