Salmon with Lemon Herb Butter Sauce

– 10 to 12 oz Salmon fillets
– Fine sea salt and
– Freshly ground black pepper
– 1 tablespoon olive oil
– 6 lemon slices
– 4 tablespoons butter
– 3 cloves garlic, finely minced
– 4 tablespoons chopped green olives or capers
– 1 teaspoon lemon zest
– Juice of 1 lemon
– 1 teaspoon dried dill
– 1 teaspoon dried parsley

Instructions:
1. Heat Oven 400°F. Line a baking sheet with foil or parchment paper and brush it lightly with olive oil.
2. Pat salmon fillets dry with paper towels. Season generously on both sides with sea salt and freshly ground black pepper.
– Arrange the fillets on the prepared baking sheet. Drizzle each fillet with olive oil and top each with 6 lemon slices.
3. Bake the salmon for about 12-14 minutes, or until the salmon is just cooked through and flakes easily with a fork. Avoid overcooking since all ovens cook differently.

Lemon Butter Herb Sauce:
– While the salmon is baking, melt the butter in a small saucepan over medium heat.
– Add the minced garlic and sauté until fragrant, about 1 minute.
– Stir in the chopped green olives or capers, lemon zest, and lemon juice, dried dill and simmer for about two minutes to blend the flavors. Season the sauce with a pinch of salt and pepper to taste.
– Remove from heat

Serving:
– Once the salmon is done, remove from the oven. Using a spatula, carefully lift the salmon from the baking sheet, leaving the skin behind if desired.
– Place the salmon on a serving platter. Spoon the warm lemon herb butter sauce over the fillets.
– Garnish with fresh or dried parsley.
