[Music] today we’re making pan-fried pork chops so if you like country style cooking and you love a good pork chop stay tuned because this recipe is up next here i’ve got a brand new package of pork chops i just picked up from my local grocer as you can see they’re pork loin center cut and they’re about a half inch thick each with the bone in makes for a perfect pork chop now we just need to season them with some kosher salt and pepper give them a good flip and season the other side as well and you want your pork chops to get to room temperature before you take it to the pan should only take about 30 minutes of rest time now on the stove i’m going to preheat a pan to about medium high heat i’m going to add some bacon grease and some butter as well and as soon as that all melts together like this you want to throw in your pork chops before that butter burns now if you’ll notice i’m putting each chop in with the bone in the center of the pan here now i’ll add a couple cloves of garlic on each side and some rosemary and thyme i’m going to set a timer for three minutes and that’s all it’s going to take each side before you flip [Music] just remember to keep that bone in in the center of the pan the center of the pan is the hottest the bone is the coldest and this will ensure that it cooks all the way through and just a little bit of pressure on the chop will keep it from curling up they’ll stay nice and flat like this by now that thyme rosemary and garlic have cooked into the butter and bacon grease so trick of the trade here is to baste these pork chops with all that flavor i pan fry steaks the exact same way because it works now one of the things you might want to do is sear the outside edges of those chops i mirror image these chops so i can stack them and turn them on their side like this and then give it a good 20 to 30 seconds on each side and once that’s done i just lay them back down here [Music] kill the heat and baste them one last time so all in all a room temperature pork chop half inch thick and a preheated pan should only take six minutes to cook perfectly then they’re ready to serve and you want to let these rest same way you would do a steak for about five minutes before you cut into them if you like this video be sure to give me a thumbs up and subscribe to my channel and it won’t hurt my feelings if you share and tell your friends where you learned how to make the best pork chops and don’t you dare throw up that jew you want to set that aside on a ramekin and use it for dipping each bite and there you have it pan-fried pork chops right here in the poor man’s gourmet kitchen thank you for watching and be sure to stop by poormansgourmetkitchen.com for more recipes and exact ingredients [Music] you

  1. Full marks keeping the bones pan centred.
    I poke a small sharp bladed knife between the meat and both sides of the bone before cooking. This helps the bone to cook evenly with the meat.
    Good ol pork chops are pretty hard to beat.
    I've never forgotten that Bradey Bunch episode where Bobby was seeking an image and he adopts the voice of Humphrey Bogart. He asks Alice what's for dinner? She replied, Pork Chops and Apple Sauce. Bobby repeats the reply "Pork Chops and Apple Sauce" with the Bogart voice imitation.

  2. If you plan ahead a little, a dry brine overnight in the fridge makes a huge difference in the juiciness. Just put them on a rack, salt both sides lightly and stick them in the fridge uncovered πŸ™‚ I do the same with steak sometimes

  5. 1. Double thick bone in Chop.
    2. Season it with a good amount of olive oil, salt, black pepper ( coarsely grounded ) & red chilli flakes. Let it rest for 2-3hrs.
    3. Slice the sides of the fat to stop it from curling.
    4. Heat the pan & add olive oil.
    5. Start by searing the sides & then lay them down.
    6. Add some good amount of butter, Rosemary, Thyme & garlic ( crushed, peeled & not sliced ).
    7. Keep it moist with the butter being splashed on it while cooking.
    8. Remove the chops and let them rest for 5 mins.
    9.Serve with a loaf of Dinner Roll, Salad & two separate sauce / chutney.

  6. First time preparing pan fried pork chops. I used thin bone – In chops. Didn’t have bacon grease, so I just used butter. Used garlic, in the jar and Rosemary spice. They didn’t get as brown as I would have liked. I didn’t have much juice to baste the chops with. They were ok. Would have preferred more flavor.
