Vegan baid tamat (tofu scramble with tomatoes)

    **INGREDIENTS**

    1 block firm tofu, pressed, drained, and hand crumbled

    2 tomatoes, chopped into small wedges

    1 tsp paprika

    1 tsp ras el hanout

    1 tsp turmeric

    1 tsp garlic powder

    1 tsp cumin

    Salt

    Pepper

    Oil

    **INSTRUCTIONS**

    1. Heat the oil over medium heat.

    2. Add the tomatoes to the hot oil, cooking until they begin to wilt and stick to the pan (~4-5 minutes).

    3. Add the crumbled tofu, mixing with the tomatoes.

    4. Add the spices, mixing.

    5. Cook until the tofu is sufficiently moist and eggy, roughly 4-5 minutes.
