This recipe is a classic, passed down from my great-grandmother, to my grandmother, to my mother, and now to me. Chicken Parmesan is also known as Chicken Parmigiana. It is one of the most loved, most popular, and most ordered chicken recipes in the world. But often times, the chicken is too dry, doesn’t have enough flavour or seasoning, or cheddar cheese is used instead of mozzarella. The secret for maximum flavour is to make sure your chicken is well seasoned. This tradtional recipe may have a few steps but it’s so worth it. Follow this recipe and you won’t be disappointed. Chicken Parmesan Recipe
Ingredients:
2 lbs. chicken cutlets
3 cups seasoned bread crumbs
3 eggs
3 cups tomato sauce
2 cups shredded mozzarella
garlic powder
dried oregano
dried basil
salt and freshly ground black pepper
oil, for frying

Directions:
Crack eggs into a shallow dish and beat with a fork until frothy.
Season eggs with salt, freshly ground black pepper, garlic powder, dried oregano, and dried basil. Set aside.
Place bread crumbs in a shallow dish. Set aside
Season both sides of chicken with salt, freshly ground black pepper, garlic powder, dried oregano, and dried basil.
Dip both sides of the chicken into the beaten eggs. Allow excess egg to drip off.
Dredge both sides of egg-soaked chicken in the breadcrumbs.
Pour oil (about ½ inch deep) into a pan and heat to medium-high.
Place cutlets in hot oil, and fry until golden on both sides (about 3 minutes per side). Drain them on a paper towel or wire rack.
Arrange fried cutlets in a baking dish.
Cover with tomato sauce and then mozzarella.
Bake at 350° F for approximately 30 minutes, until mozzarella is melted and golden.
Serve with your favourite pasta, or with roasted potatoes, or on a bun.
