I really need to work on my writing, but I'm looking for advice on how to make my buttercream more stiff. It seemed like mine was starting to melt already halfway through decorating.

    Your hands might be warming up the piping bag too much.

  6. You can use a toothpick and draw on the words before you pipe them. I’m not great at judging word spacing/size and this has worked well for me. Mess it up and just smooth it over and try again 🙂

    As a fellow hot hander, I chill everything. Chill the icing as much as I can. Chill or freeze the cake. Chill my hands. Even then I have to pipe quickly, especially in the summer.

    Do you reduce the amount of sugar you use to offset the sweetness from the icing? Of the cookie cakes that I’ve seen, they don’t generally frost the base beyond the border and lettering.

    Using a mix of shortening and butter if you’re making an American buttercream is one way to prevent the icing from getting too soft or melting.

    You need more tension on the bag you’re writing with to give you even width frosting throughout the letters. Twist the band side of the piping bag until it’s tight and use that to hold with one hand while guiding with the other hand closer to the tip. The decor is perfect but handwriting needs work
