Had a ton of strawberries on hand and decided to try and make a simple freezer jam, but I whisked the 2 cup mashed berries/4 cup sugar together instead of stirring along with the pectin. It sat out for about 12 hours before refrigerating/freezing. Aside from a fluffier texture, is there any danger here (air bubbles, bacteria growth, etc) ?

You’re totally fine. Whisking just aerated it more which changed the colour.

Unless it’s been hanging out in your fridge too long, it should be just fine. The wish just incorporated a bunch of air, which lightens the color. If you don’t like the appearance, put it in a saucepan and bring it to a brief boil then let it cool.
