I picked up a ribeye from the store and noticed nothing wrong with it other than it was slightly oddly shaped. No off smell or color that I noticed. I cooked low on the grill then transferred the steak to the hot side for about 5 minutes.

When I was grilling it i noticed it was flopping around and falling into the separate ribeye sections. When i pulled it off some sections had the steak fibers pulling apart which I am not used to seeing. In picture 2 you can see some of the steak falling apart and looking sort of mangled (I did not mangle it… it looked like that when I cut it).

Was the steak rotten and could that cause something like this?

    This is extremely common in ribeye. Nothing to worry about. In fact I think the steak is of higher quality when the cap separates from the eye before you cook it. Just to make you feel better, I once had the cap, the lip, and the eye completely separated into three parts once the steak is out of the oven. https://postimg.cc/hz8dnxty It was one of the better tasting ones.

    My own explanation is when the steak had low water levels, such as it was hang for longer, or dry aged, the ribeye tends to break down along the fat layer. This may not be correct. On the other hand those steaks tend to be better tasting, juicier, and more expensive

    I’ve been an executive chef for 23 years. You got a piece of meat that was glued together with meat glue most likely. The only thing wrong with it is the cook temp 😆

    Only thing wrong is that you had enough time to take a picture of it I would have devoured it. I always plan on taking a pic for this subreddit but once it’s cooked I eat it up. Only picture I can take is the remaining juices but even that is hard because nothing goes to waste some rice or bread to sop it up is the way to go 🤷🏿‍♂️🤦🏽‍♂️

    I always think it looks less appetizing when it’s just hacked up and left flayed about. The cook is okay. I’d eat it.

    Could be cut the wrong way. Meat should be sliced against the grain (direction of the muscle fibers in the meat), not with the grain as it can cause loss of fluids as well a different texture. Separation may also occur, but that doesn’t mean there is anything wrong with it!

    That being said I’d absolutely smash that steak.
