hey friends it’s the perfect time of year to serve up some no cook dinners that won’t heat up your kitchen the weather’s absolutely beautiful but that heat leaves us wanting lighter fresher meals and honestly just zaps our energy for cooking and those fruits and veggies taste their best at the peak of freshness in the summer everything tonight is going to be quick and easy fresh and flavorful best of all no cooking required friends tonight I’m making one of my favorite little takeout treats at home this is the Chick-fil-A cool wrap and we absolutely love these me and Maddie get them every time we’re out nearly I’m going to use this brand I don’t exactly know how to say that of the whole wheat and flax seed flatbreads I really prefer the Flatout brand because they’re more like a rectangle instead of a square these also are perforated here so you could make like little mini things so when I try to make a big wrap out of these they’re bad to tear on me so for that reason I’m not putting my dressing inside of here I’m just going to start with a little bit of shredded green leaf lettuce here if you just had the big leaves that is perfect that is probably how Chick-fil-A actually does it I’m going to use a little shredded cheddar and Monteray Jack cheese I just bought deli meat out of the Kroger deli this is B’s head fire Smith grilled chicken and it is absolutely delicious and if you’ve had Chick-fil-A’s wrap it is grilled chicken but it seems to me like it’s more shredded like Deli me I’ve changed my mind I’m going to turn this around sort of caty cornered and maybe that will help with it the perforation on it and I’m just going to roll this little baby right up here fold in my ends and roll it up now the thing that is so great about these Chick-fil-A cool wraps they only have oh it’s trying to tear on me about 360 calories that’s just for the wrap itself full of cheese mainly grilled chicken and lettuce where you run in to calories with your cool wrap is with the dressings because those little packages at Chick-fil-A they’ve got nearly 300 calories in them but they do really make the wrap and you can never get it unrolled at Chick-fil-A and get dressing in there anyway which is actually probably better for quality control because I’ll just squirt some out in my little container that it comes in and then I’ll dip and what I really love is Chick-fil-A’s avocado lime ranch but you can use buffalo sauce you could use any kind of dressing that you wanted to you could even use chicken tenders leftover really grilled chicken any veggies anything that you want super simple four ingredient no cook dinner or lunch once I got all of my ingredients entered into my Lose It app my wrap came to 548 calories and that does include the dressing I just thought some of y’all might be interested in this app I use the free version it really helps me track how much I’m eating you can also add in your exercise that you’re doing and this is not sponsored but I just thought this would maybe help somebody who’s looking for a free way to trag all these things I love this little app and I am making a fruit salad this week but I just honestly have run out of time today it’s Bible school week so I’m going to save that for tomorrow and I’m just going to have some cucumbers and carrots with mine tonight and this is delicious I was really craving this fruit salad when I made that Chick-fil-A cool wrap and I just run out of time but I’m going to go ahead and put it together now that I am back home and I’ll have it ready to eat out of it for the next 2 or 3 days this is pretty much just a wash and dice game I’ve got some large seedless green grapes and they’re so good they’re kind of tar but I love that about them I’m just slicing these these right down the middle I think some of them that are super long I may just go back and cut them in half cuz I want everything to be you know kind of the same size of a bite I feel like that looks like about a cup and a [Music] half I’m also going to put in about half a cup of fresh blueberries you can definitely use blackberries here if you wanted to that would be great too now I’m going to work on my strawberries these are really good and sweet cut them up also into pretty little B siiz pieces we’re going to need about two cups of strawberries I’d say that’s about one cup the main thing here is that you just use really good rip fruit this is a great time to really get all the seasonal things that are coming in in your area good way to put them to use and strawberries have been really good here recently I’d say we’re up to two cups now and we’re going to need about a cup of Mandarin oranges and I just decided to use canned Mandarin oranges but if you have fresh you can definitely use those just peel them and all that the main thing is if you’re using canned oranges you really want to drain them well just when you think you have all the juice out of them shake them a little more [Laughter] I really like the canned Mandarin oranges because you don’t have to do any of that peeling don’t worry I’m testing at every step we’re good I’ve got one lime here I’m just going to roll it under my hand this will kind of break it up and really you can get a lot more juice out of them when you do them this way I’m also going to just run this lime over my zester I want just a little bit of the zest off of it not a whole lot the zest is very potent but I do want just a little bit of it now we’re just going to cut it in half and I’m going to squeeze all of this slime right down into this little Bowl here if you don’t have a lime you can definitely use a lemon or even an orange any citrus fruit will do and the acidity in the citrus fruits is also going to help your fruit stay a little bit fresher longer it’ll keep it from turning brown quite so quick speaking of turning brown quick you see I’ve got one big banana here and you don’t want to put this in until you’re ready to eat it now to this lemon I’m sorry I keep calling it lemon this lime juice I’m going to put in two tablespoon of honey give it a little bit of sweetness going to pick up just a little of that zest from that lime put that in let’s give it a little mix now we’re just going to pour this right over the top and very gently toss our fruit all around in here whatever you have on hand you can put in here a green kiwi would be beautiful in place of or in addition to these green grapes if you like grapefruit I think it would be really really good in here and I think a little poppy seed would be really good on this too and I’m just going to put a lid on mine and put it in the refrigerator make sure you cover it and this will stay good for 2 to 3 days when you’re ready to eat it just slice your bananas up in little circles like this and toss them in I couldn’t wait till in the morning I really wanted to try this look how pretty it is it’s very pretty what it up here let me look at it I’ll eat this whole bowl tonight I couldn’t wait I had to have some after Bible school I really like this because like the honey is not like supery sweet with it but that little bit of lime zest and lime juice it kind of like gives it a zip and it just like intensifies if that makes sense like a banana mhm it just makes it better it’s good no matter what fruit you put in it it’s good for side good for dessert mhm it’s pretty too it is pretty you don’t like fruit do you wish I wish that they could see your face right now you’re more of a Snicker salads man aren’t you yeah but that does look good I will say that looks good you might like it it’s got the kind of fruits I like in it I left you some green grapes out on their own you do like grapes M I love strawberries and blueberries too the bananas all all that just don’t want it mixed all together no I’ll eat that okay in fact he did in fact not eat that not even a bite of it I don’t think but that’s okay he’d just rather come in here and grab a Little Debbie cake and that’s fine but I just can’t do that all the time and I love this it’s super good fresh and fruity I mean it’s fruit honey lime what’s not to love I’ll make this a bunch more times this summer today we’re going to make something that’s highly requested by Maddie this is a Caesar chicken pea and I’m using every shortcut in the book this week friends I actually went into Kroger’s to buy my groceries this week haven’t done that in ages but I did find that they also do pulled rotisserie chicken in a little section of their Dai and I absolutely positively love these pulled rotisserie chicken breast they sell theirs by by weight by the pound and this little package was a little over half a pound and I’ve used a little over half of it so probably half a pound of this rotisserie chicken and I’m just going to chunk up these big pieces just a little bit more you could definitely use leftover chicken you could even use canned chicken in here this is a great recipe for using canned chicken and I’m actually going to chunk this up just a little bit smaller once I looked at it I want it a little bit smaller I want little bitty bites also going to need a little bit of red onion Red Onion is pretty strong which I really like and I think the color is beautiful so I’m just going to dice it up pretty little using about a third of this onion now I’ve got just a little roma tomato and I’m going to dice it up most Caesar salads don’t normally have this but it does give a nice little sweetness to your wrap I’m going to toss in a little green leaf lettuce this is some that I bought pre-shredded in a bag and I almost forgot our little handful of shredded parmesan cheese give it a little bit of Caesar dressing to your liking this is a really pretty little salad and you could eat it just like this and I’m using some whole wheat pasas and I do like like to fold them and make a little sandwich but oh these aren’t split these are not preit I like it when you can get them cut and it makes like a pocket I love a p pocket but I’m just going to put these down in my little taco holder thank you Janet she told me they had these at the Dollar Tree and they come two to a set for a dollar and this is so handy when I went back to make sure it was Janet that told me about these I found another comment from Sandy and she said if you don’t have taco holders just turn a muffin tin upside down and that will hold your taco shells up you guys are so ingenious I’m just going to fill these full and we’ll eat them like this and it just dawned on me I forgot to put in my pepper I like black pepper on my salads especially a Caesar salad so I may come over top of this with a little black pepper this was so yummy and I really liked these pasas they’re not the kind that I normally get and they wouldn’t make a pocket but they were really soft and fresh this salad was so good the only thing that would take this over the top is some really crunchy bacon put down in this wrap with this 10 out of 10 you got to try these today I’m making probably my favorite summertime treat this is just a cracker salad as silly as that sounds but I love it this recipe starts with one sleeve of just plain old saltin crackers you don’t want them into crumbs you want them broken into you know just smaller pieces you could probably use oyster crackers and I started to try that this time but I’ve always made it with Saltines and I just like the look of it with Saltine crackers I think oyster crackers might make it look a little more I don’t know like perfect and y’all know I don’t like my food to look perfect I’m not the kind of person that could like decorate something and make it look good I like my food to look a little messy and rustic I’m taking three green onions and I’m going to chop them up nice and small I’m using almost down to the very end of the white and all the way up to the end of the green you get a lot of flavor out of green onions I can remember in the summer mama and daddy would always have a big old piece of green onion on their plate at supper time no matter what we were eating they had a big old green onion there the only thing that you have to cook in this salad would be to hard boil your egg and quite honestly I did buy this egg already bowed over in the deli case I saw this little pack of two hardboiled eggs already boiled and peeled and they were like a dollar and I thought now that’s lazy and then I thought I don’t care I’m buying them so I didn’t even have to hard boil that egg or peel it now for our pretty little tomato oh this one is so good and so rip looking and it’s just been in the last few years that I’ve really began to enjoy eating tomatoes I love the little Roma tomatoes and in the summer in Tennessee when we get our grander County Tomatoes these make all the difference in the world I’m not the best tomato dicer in the world so you’ll have to forgive me yes this is my day job now but I’m still just mean I’m going to make a mess of it probably but it still tastes delicious and we’re going to put every bit of this big old tomato in here I’m going to go ahead and crack my black pepper in now so I don’t forget it I don’t put any salt in here cuz you got saltin crackers we’re going to use about a cup and a half of mayonnaise to bind this all to whoops as I was saying about your mayonnaise but I just ain’t got room in here I got to switch bowls okay this is going to make my life a lot easier here in this bigger bowl and speaking of bowls this is probably the number one question I get on my channel is where did you get these blue and white mixing bowls friends I wish I could give you a link to these because so many ofans want them and they’re beautiful but I bought this set at Sam’s years ago I think it was $19.99 or $24.99 there’s five different bowls from small to super big and they each have a lid and they have a silicone ring on the bottom that keeps him from sliding around I loved them so much that I also bought a little set of dinner wear there that kind of matches it and it was like $1 199.99 I look every year to see if they have this particular one back and they haven’t up to this point and I have looked Amazon over and over and I found one set that I think is pretty comparable it looks a lot like it with the pattern and also the design it’s a set of five and they have lids and the silicone rings on the bottom too so that’s as close as I’ve been able to find to this set but if Sam’s Club every gets these back and I check all the time I will be sure and let you guys know in a community post or something I always like to put just a little black pepper on top of it before I eat it and this is the kind of dish right here that you’ve just got to eat it the same day you make it you don’t want to put this together ahead of time or it’ll get soggy on you I know this sounds like a weird combination of stuff but it’s so so good you can eat it just by itself and I have before when I’ve had some left the second day I’ve put it on a little bit of toast and it was good but my very favorite thing to eat this with a lot of Ys will already know it’s perfect as a side dish along with pinto beans I love stuff like this on the side of pinto beans don’t think about the weirdness of it friends just trust me make this for yourself this summer you’ll love it this don’t have nothing to do with today’s video but I wanted to show you all some Bargains that I found at Kroger’s today that store is resetting like they’re redoing all their shelves rearranging everything like grocery stores do every now and again when they reset they clearance a whole bunch of stuff out I found these two pound and A2 bags of lightly salted roasted almonds for $427 I know that has nothing to do with today’s video but I like having somebody to share my Bargains with something I love about Kroger you can find anything there and we’ve got one of those Kroger marketplaces that has clothes and everything they had this slicer and as seen on TV but anyway I think it was just a last video or so I said I hate gadgets and I do hate gadgets and I didn’t want to buy this I really didn’t but guys look at that price $467 and I thought you know what I will regret this one day if I don’t get it and I do have some things I’m chopping up this week like I do every week but I thought I’m just I’m going to try that I was excited to find this very rarely go in anymore and I miss deals like this but honestly there’s $5 I probably wouldn’t have spent and been none the wiser but anyway if you’re in there check these areas always you guys know that I love a good tuna salad and this one I could not be more excited to share it with you this is I guess we’ll just call it a veggie full tuna salad the first thing I’m going to do is throw a big cup full actually I’m just going to finish out that bag of shredded green leaf lettuce into a bowl I thought that I’d use my fancy new Chopper today that I got on clearance but be warned soon as I open the box I see that the uh folks are already in arbitration that should have been a sign to me look at here I done cut myself just getting it out of the box let me visit first aid and I’ll be back okie dokie let’s get back to it I’ve got one yellow bell pepper and I’m going to cut it right down the center I’m going to take my pairing knife and I’m just going to go right around here and get this little part out I’m also going to take my good finger and get those seeds out and I’m actually going to set this aside to use for later then this side of my pepper going to clean it out chop it into some bigger pieces now let’s try this bad boy out works pretty good so that was about half of a yellow bell pepper I’m going to take about half of an English cucumber and let’s put it over here and dice It Up by now you know the drill we’re going to do about half of a red onion had to use a little more pressure on those onions that thing made pretty quick work of this stuff and I’m done maming myself for the day do not stick your finger in there there’s a tool to clean that with let’s put all of this into our Bowl I’ve got about three green onions that I’m dicing up as well I just really didn’t think this would go through the chopper that well so I’m doing it by hand and I’ve got a pretty small little roma tomato I didn’t think it would go very well through the chopper either this is not a make or break item in this little salad at all but I happen to have this little jar of Capers that I’ve just used a little bit out of so I’m just going to throw in maybe a tablespoon of these I had somebody ask me in a recent video what Capers are and I just always thought they were part of the olive family they’re actually a fruit and it’s like a berry and it grows on a bush in the Mediterranean area like in little rocky areas there they are kind of salty but they really they’re not good on their own necessarily but they give a lot of good flavor to dishes your sauté and and I think to salads too I happen to have this little container of chopped Italian herbs there’s oregano and parsley and basil in here and I’m just going to sprinkle maybe a tablespoon of those in going to take half of a lemon and juice it right over top of this salad going to squeeze in about a tablespoon of Dijon mustard going to drizzle just a smidgen of olive oil just a help everything kind of stick together I’m going to crack in some black pepper no salt we got plenty of salty things in here when we taste it if it needs it it’s sitting right over there on the counter if we want it and you know who’s last to join the party it’s the start of the show I’m using a 12 oz can of Chunk light tuna and I have drained it very very well now we’re just going to give it a really good toss this is a bright fresh way to make a tuna salad really different full of good veggies and all kinds of tasty little treats in here let me give her a taste here tastes really good really bright really fresh but you know what I just got to have maybe a/ third a cup of mayonnaise I just really want that mayonnaise I’ve tried to do chicken and tuna salads before with just Greek yogurt and different things and I’ll end up using three or four times as much I really crave the little bit of mayonnaise and I’m just doing it to me nothing gives you the flavor that you get from mayonnaise I just love it maybe it’s just the old East Tennessee girl in me but I love the mayonnaise clean Fork let’s see if that got it perfect M perfect there’s so many ways that you could eat this tuna salad you could put it in a big tortilla make a wrap out of it you could wrap it up in the pasas we had earlier this week but I I’ve already done that since I only used half of this bell pepper I thought that I would dish it up and serve it in this pretty little bell pepper and I am starving to death friends so I just stuffed it like a big Cornucopia of goodness just overfilling and coming right out onto the plate can eat it with a fork and then when you get down into that bell pepper just cut it right up and eat it right along with it oh my gosh this was so so good watch this video next for some crock poot recipes that are cookout and barbecue inspired you don’t need a grill and you don’t have to worry about dodging those summer showers either thanks so much for watching I appreciate you being here with me till next time I send you love from my kitchen

  1. 9300 views and only 1300 likes??? I hit that like button as soon as I see here videos. Only takes a second and helps Mama Mel out!!

  2. Thanks so very much Momma Mel for the wonderful video!!!! I really really appreciate it!!!
I am definitely trying some of these salads and the copycat wrap!!!
I absolutely LOVE your videos and your channel!!! Thanks again so very much for the wonderful videos!!!
Take care and have a wonderful Monday and week!!! 👍🏻😃

  3. My doctor told me to eat and egg everyday. They are a perfect protein and low calorie. Sometimes I eat two and my cholesterol is normal because I also use olive oil to cook as much as I can.
It actually reduces cholesterol in your blood.

  4. Hi Mel, hey I love your videos. Just wanted to let you know that I make the exact same fruit salad but I use maple syrup instead of honey but I am sure both are delicious. Thank you. This is my first comment and I don’t comment very often. blessings to you and all of your viewers

  5. Hey Sweet Momma! I just love your videos I just watch you to relax…same video over and over lol! I saved all this weeks recipes can't wait to try them. Wanted to pass on a time saving tip. Like we use the shredded chicken, I buy the big 10 lb package of ground beef at Sam's and cook it up. I spread it flat in gallon bags and freeze it! No dirty skillet for crockpot recipes. You can break off a bit for nachos or chalupas, whatever! Saves money buying in bulk too!

  6. Mel, to make your pita pockets, cut them in half and they will open up. Everything looked so refreshing!

  7. hi… could you explain why you said your dicing up green onion,21:46 in video . I always thought dice was cube like squares? I don't see that here? Could you tell me why you said dice here.. what does dice mean here to you? Learning to cook on my own and would like to know the difference? thanks…… If you cant answer back can anyone help me with this?

  8. These are great! I’m out traveling in my rv at a lake this week. These are perfect for me to make ahead and have for lunch or a snack while we are out on the boat! Would like to see more easy make ahead recipes to have while I’m out camping and traveling down the road!

  9. Thank you for some great ideas for hot summer food! It’s almost always near or over 100 here in Hemet from end of June to end of September…so I really appreciate this and hope you will come up with some more recipes to beat the heat! My dad too always had a whole green onion on his plate with a little pile of salt to dip the end in…he was from Missouri, grew up in the depression years and also was known to eat sometimes an onion sandwich even in his later years! So funny about your under $5 chopper with its arbitration notice in the box….I would have picked up too ( and I’m not a gadget gal, hate anything extra I have to wash)… Hope you will find a way to use it without hurting yourself😊🤞.

  10. I just made the 3rd salad in this video. It was so great! I had two big helpings when I should have stopped at 2. Thank you for these easy recipes!

  11. These look delicious. I’ve had pita bread like you got and if you cut it in half, it will have a “pocket”.

  12. I always soak my red onion in cool water for about fifteen minutes and drain thoroughly before adding to my dishes. It calms the bite down.

  13. Darling, I always watch your videos to the end. I don’t wanna miss anything and I’m making what you’re showing for the rest of the week.

  14. Love it all!!! These are perfect for summer and my weight loss journey and not feeling like im depriving my family. Thanks
I've been using the loseit app for years on and off. My recent journey has been so successful bc of it.

  15. When chopping tomatoes..deseed the tomatoe..push the seeds out with your thumb..cuts better and you don't have all if those seeds in your food…love this series..it's too hot to eat!

  16. Try some garlic expressions on your tuna. It’s sooo good. It’s sold at krogers. It’s also fabulous on tomato’s and cucumbers ❤

  17. I made the first recipe with my son as he likes cooking and wanted to help me, we loved it! Thank you for helping us on busy nights!

  18. Love these ideas, keep them coming!! Esp. That tuba salad lots of healthy veggies and no cooking = winner!!!!

  19. Hello Mel, I just got back from Kodak, Tennessee. My family spent a week there with the grandkids. Visited Dollywood. I wish I had these recipes last week it was so hot. 😩

  20. All of these no-cook recipes sound and look wonderful. It's too hot over here to use the oven, and I've been sweating standing over the stove. I would have cheated and bought an egg already boiled too. That would make a quick supper even quicker. I don't care, I just get too lazy after work and everything I have to do. I love your Sam's dinnerware that you bought years ago. I also love a cracker salad. I enjoy you so much. You were so helpful with quick meals. Hey, please let us know how that chopping Gadget from Kroger's works

  21. your cracker salad looks good–I might try it with a sleeve of Ritz cracker–I think the buttery taste might be good…dts/usa

  22. It isn't a salad I've ever had but it seems it would be like an egg salad on a saltine which I love, or ham salad, or tuna salad, or chicken salad, etc. and it makes sense you'd want to eat it right away because the saltines will get soggy fast. Reminds me almost of deconstructing anything…

  23. Haven't watched you in awhile, found you or had time or doesn't come up on my selections. Great video. Great inspiration.
