If you need a great summertime pasta salad recipe, this one has got to give the most bang for your buck. It is so incredibly easy, colorful, filling and robustly fresh and delicious with its Mediterranean vibe.

I use mushroom stuffed tortellini from Aldi, but you can use your pasta of choice. Lucious artichokes, sweet and smoky roasted red peppers, briny kalamata olives, salty feta cheese and fresh herbs all tossed with a tangy red wine vinaigrette make this everyone’s favorite new pasta salad.

I’m going to make a super quick pasta salad with a Mediterranean Vibe and very few ingredients using this little package of talone mushroom talone that I got at Aldi just took that tortillini and my artichoke pieces my artichoke hearts were frozen so I threw them in just at the last minute of the tortillini cooking so the tortillini and the artichokes go in right there and then a sprinkling of oregano and then we need some camada olives here so I had mint um basil would work equally well and then my dressing here is just olive oil vinegar a little mustard to emulsify the whole bit and then the last bit is just a crumbling of feta
