hey guys! this is a tried and true recipe that i’ve made about a dozen times with no problems. i got a new pan, and for two batches now, there are some in the middle that are cracking.
six cookies from each batch, in the same exact places to be precise.
i’ve never had this issue before, any idea what could be happening? is this a circulation issue, like i’m not letting them rest long enough and the ones in the middle aren’t dry?

  1. Maybe uneven cooking on the new pan. I have that problem only with Chocolate Macarons. Same recipe, same oven. I’d go back to the old pans
