I've had my Egg for a few months now. I have been intimidated by using smoking wood chunks. I've watch plenty of video about placement (position and timing). I feel like I am still not getting it right and the smoke isn't truly blue. I let the coal get glowing and the white/grey smoke to clear. Then I put the chunks directly on the coals to let them burn for about 10 minutes. Is this smoke still too white?

    It’s hard to tell from the picture, but what you are looking for is a thin smoke that doesn’t so much billow. It also shouldn’t smell acrid. If it is sweet smelling and pleasant, you’ve got it.
