Obsessed with this idea and it was super easy to make, just scrape the seeds/pulp out, bake the squash, fill with your choice of bolognese and whatever else, and bake a little longer. Mine has whole French lentils, a little bit of fancy schmancy locally made pasta, mushrooms, and fresh Parmesan on top. Basil, onion, garlic, tomato, Italian herb blend, and however much salt/pepper make for a very quick and easy sauce.
