If you want to make mashed potatoes for one or two people, cook the potatoes in the microwave for 5-8 minutes in the peel (preferably flipping halfway through).
Optional: while the potatoes are cooking in the microwave, heat milk and butter (or oil) in a saucepan. Add the herbs/garlic.
When the potatoes are ready, you can easily peel them from their skins. Lay the potato on a clean kitchen towel and use your fingers or a spoon/ butter knife to remove the peel. Or cut the potato in half and scoop it out, but this is more wasteful. Or leave the peel on, it’s good for you.
Grind the potatoes
Side note: regular potato flakes are a common item in your pantry. They’re great for thickening dishes. Plus, if your mashed potatoes turn out too runny, that can be instantly remedied. Or you can just use them to make mashed potatoes, but it’s not as flavorful as real potatoes.
