Smoked trout frittata ‘n’ tots

    Fried spring onions and wilted baby spinach in butter, two scrambled eggs and half a can of Trader Joe’s hardwood smoked trout. About ten minutes over low heat in an adorably teeny frying pan.

    This fish is every bit as good as bacon to accompany eggs.

    Hot sauce on the tots is a family friend’s own little bottling project, called Southern Banshee. I’m sad that I can’t find this stuff in stores, I don’t know if he ever got off the ground selling it.
