Can I make cookie batter – and refrigerate to bake 1-2 days later?
Hi Bakers,
I will be making cookie bars & I’m wondering if I can make up the batter, then refrigerate it for a day or two before baking. Would this effect the outcome of the cookie?
Any advice appreciated, thanks!

Cookie dough gets even better if you refrigerate it for a day or too- I’m not sure about a wetter batter though…

No problem. I’ve kept it in the fridge for a week no problem

I’d recommend you leave the cookie dough on counter for 10 mins or so to warm up a bit prior to baking. Should be great!

It should still bake up fine. If you use a glass pan just be aware – some glass might shatter when going straight from a fridge into a hot preheated oven!

All the time. We almost always have cookie dough in the fridge. Usually we leave out the chips, nuts etc so the kids can choose individually when they want to bake a few

I make a whole bunch of cookie dough at once. I form little discs (we call the sweet hockey pucks) and then I freeze them. I bake from frozen with an additional minute or two on the bake time. Fresh cookies within 15 min! Every time.

I make a bunch of cookie dough balls, freeze them, and then cook them when I want them. Just add a few minutes to the cook time.

Whoever took that photo is brilliant. Exposed cookie and chip layer, sea salt perfectly sprinkled, the fork placed perfectly to cut a bite… Damnit now I want one.

I freeze mine into half batches and thaw it when I need it

I make triple batch of batter. Take 2/3 roll into cookie size balls, freeze not touching each other on a cookie sheet. Once frozen toss in zipper bags, 12 in a bag, date and back in freezer. Take rest dough out if grains bake for now! When We want cookies, bag of dough balls on cookie sheet put in oven a bake. So convenient. I’d say they keep for months but ours last that long.

I form them into balls, or a log, wrap in cling film, freeze, then have freshly baked cookies on hand whenever.
You don’t even need to thaw it. Pop it in the pre heated oven frozen and it keeps its shape nicely.

Technically yes. In my house, every time I try, the house hippos catch wind of it and, poof it’s gone.
You can also make a batch of dough, scoop it to size and freeze the unbaked cookies. Then bake as needed.

Every bakery makes cookies in huge batches and freezes the dough. You bake off what you need on a given day.

I only really bake cookies for the holidays when I make cookies boxes for Christmas gifts. I’m usually making upwards of 300 cookies. I start the doughs about a month before and just freeze them so I don’t have to do them all at once.
I will also sometimes make dough and roll it into disks with parchment separating them and freeze it so you can pop it in the oven and have gingerbread all year long if I want it.

Would make it even better! Refrigerator or freezer doesn’t matter, it will enhance the flavors! Just pop it straight to the oven no need to let it defrost or get into room temperature.

Off topic but I just realized I never saw someone using a 3-prong fork until now. I kinda forgot people have forks besides 4-prong ones lol.

Cookie dough generally always needs to be chilled unless the recipe specifies it can be baked without being chilled
